A Simple Family Recipe That Beats Store-Bought Crackers
Some recipes bring back memories the moment you see them, and these homemade cheese crackers are one of those recipes for me.
A longtime friend who also loves to cook shared this recipe with me years ago. While looking through my mom's recipe collection recently, I came across the recipe card that I had completely forgotten about. Finding it again brought back a flood of memories of making these crackers when my parents were still alive.
I also remember making them for my kids. Instead of buying cheese crackers at the store, I would make these homemade ones. My kids actually told me they preferred them over the store-bought kind!
These crackers are made with extra sharp cheddar cheese, butter, flour, and just a few other simple ingredients. They're crisp, cheesy, and perfect for snacking. They're also a wonderful example of why I love going through old family recipe collections. Sometimes the simplest recipes are the ones that bring back the best memories.
Ingredients:
8 ounces extra sharp cheddar cheese, shredded
1/4 c. butter, room temperature
1 tsp. salt
1 c. flour
2 Tbs. ice water (plus more if needed)
Directions:
Preheat the oven to 375°F. Line two baking sheets with parchment paper and set aside.
Add the shredded cheddar cheese, softened butter, and salt to the bowl of an electric mixer. Mix on low speed until the ingredients are thoroughly combined.
Gradually add the flour and continue mixing until the mixture looks crumbly and pebbly.
With the mixer running on low, slowly add the ice water. Continue mixing until the dough comes together and forms a ball. If the dough seems too dry, add a little more ice water, about 1 teaspoon at a time, until it comes together.
Form the dough into a disk and wrap it in plastic wrap or place it in a resealable plastic bag. Refrigerate for 1 hour.
Divide the chilled dough in half. Roll each portion into a very thin rectangle, approximately 10 x 12 inches and about 1/8 inch thick. Try to keep the thickness as even as possible so the crackers bake evenly.
Using a pizza cutter or pastry wheel, cut the dough into approximately 1-inch squares. Transfer the squares to the prepared baking sheets, arranging them in a single layer. You can leave a little space between them, although they won't spread much during baking.
Bake for 15 to 17 minutes, or until the crackers are puffed and lightly browned around the edges.
Immediately transfer the crackers to wire racks and allow them to cool completely. They will become crispier as they cool.
Once completely cooled, serve and enjoy your homemade cheese crackers!
Tips for Best Success:
- Use extra sharp cheddar. The stronger flavor gives these crackers that delicious cheesy taste.
- Shred your own cheese if possible. Freshly shredded cheddar generally blends more easily into the dough than pre-shredded cheese.
- Make sure the butter is softened, not melted. Softened butter combines with the cheese more evenly.
- Add the water slowly. You may not need more than the 2 tablespoons listed. Add additional water a teaspoon at a time only if the dough won't come together.
- Don't skip the chilling time. Chilling makes the dough easier to roll and helps the crackers hold their shape.
- Roll the dough evenly. If some crackers are much thicker than others, they won't all finish baking at the same time.
- Watch the crackers closely near the end of baking. The edges can go from lightly browned to too dark fairly quickly.
- Let them cool completely. This is important for getting that crisp cracker texture.
Variations and Substitutions:
- Mild cheddar: Use regular cheddar if you prefer a milder cheese flavor.
- Sharp cheddar: Sharp cheddar works beautifully if extra sharp isn't available.
- Pepper jack: Substitute pepper jack for some or all of the cheddar for a little extra flavor and heat.
- Garlic cheese crackers: Add a small amount of garlic powder to the dough.
- Herb cheese crackers: Add a little dried parsley, Italian seasoning, or dried thyme.
- A little heat: Add a pinch of cayenne pepper or your favorite chili powder.
- Different shapes: Use a small cookie cutter to make fun shapes instead of squares.
Serving Suggestions:
These homemade cheese crackers make a wonderful snack all by themselves, but they can also be served:
- With soup or chili
- Alongside a bowl of tomato soup
- On a snack tray or appetizer platter
- With sliced apples or grapes
- With cheese and cured meats
- In a child's lunchbox
- As a crunchy afternoon snack
- Alongside dips such as ranch, onion dip, or cheese dip
They're also a nice homemade addition to a holiday snack table.
How to Store:
- Allow the crackers to cool completely before storing them. Place them in an airtight container and keep them at room temperature for several days.
- For the best texture, make sure the container is completely airtight. Any moisture that gets into the container can cause the crackers to lose their crispness.
- If the crackers soften, you can place them in a 300°F oven for a few minutes to help crisp them back up. Allow them to cool completely before returning them to the container.
Frequently Asked Questions:
Can I use regular cheddar cheese instead of extra sharp cheddar?
Yes. Regular sharp or mild cheddar can be used, although the flavor of the crackers will be less intense.
Why does the dough need to be refrigerated?
Chilling the dough helps firm up the butter and makes the dough easier to roll and cut. It also helps the crackers maintain their shape while baking.
Can I make the dough ahead of time?
Yes. The dough can be prepared, wrapped well, and refrigerated until you're ready to roll and bake it. If it becomes very firm after being refrigerated for an extended period, let it sit at room temperature for a few minutes before rolling.
Why are my crackers not crispy?
The crackers may need a little more baking time, particularly if they were rolled thicker than recommended. They will also become crispier as they cool completely.
Do I have to cut the crackers into squares?
No. Squares are traditional, but you can use a pastry wheel, pizza cutter, or small cookie cutter to make other shapes.
Can I use pre-shredded cheese?
You can, but freshly shredded cheddar is generally preferable because it tends to blend more smoothly into the dough.
Can I make these crackers thinner?
Yes. Just keep in mind that thinner crackers will bake more quickly, so watch them carefully toward the end of the baking time.
