Party Meatloaf Recipe
Turn a ho-hum meatloaf recipe into a winning meal recipe that everyone is sure to love. Party Meatloaf is a recipe that I made quite often in my younger years and my parents loved it.
When I took a cooking class in Home Economics, they asked for a most requested family recipe. They were doing a cookbook of favorite recipes for everyone taking the class. This is the one I provided.
Ingredients
Sauce
1 c. ketchup
1 1/2 tsp. mustard
1 tsp. Worcestershire sauce
1/4 c. brown sugar
2 tsp. onion powder
Meatloaf
2 lbs. ground beef
3 large eggs, beaten
1 oz. packet dry onion soup mix
1 oz. packet dry onion soup mix
1/3 c. sauce mixture
2 c. oatmeal or breadcrumbs
Directions
Preheat the oven to 350°. Lightly spray a loaf pan or line the loaf pan with aluminum foil for easy cleanup.
In a small bowl, combine ketchup, Worcestershire sauce, brown sugar and onion powder.
In a large bowl, combine ground beef, eggs, dry onion soup mix and 1/3 cup of the sauce mixture that you just prepared.
Mix thoroughly with clean hands until thoroughly combined. Put the meat mixture into the loaf pan and press out evenly.
Pour remaining sauce mixture over the top of the meatloaf, spreading it out so it evenly covers the top.
Bake for 1 hour or until the internal temperature is 165°.
For a different spin on this meatloaf recipe, we put half the ground meat mixture in the loaf pan then add a layer of cheese or mashed potatoes or both. Add the remainder of the meat mixture and top with sauce.
