Three-Generation Creamy Cucumber Salad

When the cucumbers started producing in my mom's garden, this creamy cucumber and onion salad quickly became a regular part of our summer meals. She told me the recipe came from her mother, who learned it from her own mother, making it a family favorite that has been enjoyed for generations.

One of the things I loved most was that we rarely had to buy cucumbers from the grocery store. We simply walked out to the garden, picked fresh cucumbers, and within minutes they were sliced into this cool, creamy salad. Ingredients:

3 large cucumbers, peeled and sliced thin
1 onion, sliced into thin rings
1 Tbs. salt 
1 c. full-fat sour cream
3 Tbs. granulated white sugar
3 Tbs. distilled vinegar 
1/4 tsp. black pepper
1 Tbs. fresh chopped dill

Directions:  

Peel the cucumbers if desired, then slice them into thin, even slices using a mandoline or a sharp knife.

Slice the onion into thin rings or half rings.

Place the cucumbers and onions in a large bowl. Sprinkle with  salt and toss until evenly coated.

Transfer the vegetables to a colander set over the same bowl to catch the liquid they release. Let them drain for 30 minutes.

After draining, gently press the cucumbers and onions with a clean lint-free kitchen towel or paper towels to remove as much moisture as possible. Do not rinse, as the remaining salt helps season the salad.

In a separate bowl, whisk together the sour cream, sugar, vinegar, black pepper, and chopped fresh dill until smooth and creamy.

Pour the dressing over the cucumbers and onions. Fold gently until everything is evenly coated.

Cover and refrigerate for at least 2 hours before serving to allow the flavors to blend.

Stir gently before serving.
