Vintage Rhubarb Cream Cheese Bars

One of my mother's neighbors absolutely loved rhubarb and was known for bringing these wonderful bars to afternoon get-togethers. They always disappeared quickly, and it wasn't long before everyone was asking for the recipe. Thankfully, she shared it with my mom, and it soon became a favorite in our family too.

Even though rhubarb wasn't something we usually ate on its own, these creamy bars completely changed our minds. The buttery shortbread crust, sweet and tangy rhubarb custard filling, and fluffy cream cheese topping make every bite rich, smooth, and full of homemade goodness.

It's one of those old-fashioned recipes that proves simple ingredients can create something truly special, especially when they're shared with family, friends, and good neighbors.

Ingredients:  

Crust:
2 c. flour
1/4 c. sugar
1 c. cold butter
Pinch of salt

Filling:
2 c. sugar
7 Tbs. flour
Pinch of salt
1 cup heavy whipping cream
3 large eggs, beaten
1 tsp. vanilla
5 c. finely chopped fresh or frozen rhubarb, thawed and drained 

Topping:
6 ounces cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla extract
1 c. heavy whipping cream, whipped 

Directions:

Preheat the oven to 350°F. Grease a 9 × 13-inch baking pan.

Make the Crust:

In a large mixing bowl, combine the flour, sugar, and salt. 

Using a pastry cutter (or two knives), cut in the cold butter until the mixture resembles coarse crumbs.

Press the mixture firmly into the bottom of the prepared baking pan.

Bake for 10 minutes.

Prepare the Filling

Using the same mixing bowl, whisk together the sugar, flour, and salt.

Whisk in the heavy cream, eggs, and vanilla until smooth.

Fold in the chopped rhubarb.

Pour the filling evenly over the warm crust.

Bake for 40–45 minutes, or until the custard is set and only slightly jiggles in the center.

Allow the bars to cool completely.

Make the Topping

In a medium bowl, beat the softened cream cheese, sugar, and vanilla until smooth and creamy.

Gently fold the whipped cream into the cream cheese mixture until no streaks remain.

Spread evenly over the cooled rhubarb layer.

Cover and refrigerate for at least 1 hour, or until the topping is firm.

Cut into squares and serve chilled.

Store any leftovers in the refrigerator.

Tips for Best Success:

  • Drain frozen rhubarb well before using to prevent a watery filling.
  • Keep the butter cold when making the crust for the flakiest texture.
  • Don't overbake the custard—it should still have a slight jiggle in the center.
  • Cool the bars completely before adding the topping.
  • Chill the finished bars for several hours before cutting for the cleanest slices.
  • Use a sharp knife wiped clean between cuts for bakery-style squares.
  • These bars taste even better after chilling overnight.
