Spicy Sausage Casserole
Sausage Casserole is a quick and easy dish to make. Ii is perfect for
those days when you don't have time to cook, or you just don't want to make a meal. With a few simple ingredients. This is a recipe that my mother used to make, and the entire family loved it.Ingredients
1 envelope dry onion soup mix
1 c. uncooked rice
2 c. water
1/2 tsp. salt
2 lbs. bulk sausage, we use hot, spicy sausage
1 green pepper, chopped
1 onion, chopped
4 to 6 ribs celery, chopped fine
Directions
In a large pot, mix onion soup mix, rice, and water together. Cook according to the rice package directions until rice is tender and water is absorbed. You may need to add more (hot) water if the rice needs a longer cooking time.
In a heavy cast iron skillet, combine sausage, green pepper, onion, and celery. Crumble up the sausage into small pieces. Stir and fry until the sausage is cooked, and the vegetables are tender. Drain off excess grease.
Add the rice to the meat and mix in. You can leave the meal in the cast iron skillet if it is ovenproof, or you can transfer the meat and rice to a casserole dish.
Bake at 350° for 30 minutes.
