Spicy Beef and Potato Dish
Our family was practically raised on meat and potatoes for every meal. This recipe is one of those meal ideas and it is so easy and simple to do. It combines ground beef or sausage, potatoes, onions and peppers for a one dish meal. You can make it as spicy as you like by adding hot peppers and or using hot sausage. Ingredients
2 Tbs. oil
1 lb. potatoes, peeled and cut into small cubes
1 lb. ground beef or spicy sausage
1 onion, diced
1 sweet pepper, diced
1 to 2 hot peppers, chopped (optional)
3 cloves garlic, minced
2 tsp. paprika
1 tsp. oregano
1 Tbs. Worcestershire sauce
1 tsp. prepared mustard
salt and pepper to taste
shredded cheese
Directions
In a cast iron skillet, heat oil until hot. Add cubed potatoes. Cook the potatoes over medium high heat, stirring often, until they are starting to turn brown. The potatoes do not have to be done, just starting to brown nicely.
Add the ground beef, onion, sweet pepper, hot pepper, and garlic cloves. Cook and stir until the meat is cooked and the potatoes and onions are tender.
Stir in paprika, oregano, Worcestershire sauce and prepared mustard. Add salt and pepper to taste. Top with shredded cheese with desired. Cover with a lid until the cheese is melted. Serve with sour cream if desired.
